Easy Summer Dish

Hey everyone I hope your weekend was relaxing and awesome!
This weekend my daughter decided she wanted to cook for me.. and she did an awesome job..... I'm not just saying this because she belongs to me - really.... her dish was very tasty, and on top of that it was easy and quick.

Sautéed Shrimp with Spinach, Tomato and Angel Hair Pasta.
Perfect for summer. Its a light dish, which is filling and easy to make.
I don't think you will feel too guilty after devouring this plate of food.

Recipe:

  1. Fresh baby spiniach
  2. medium shrimp, cleaned and de-vained
  3. plum tomatoes
  4. angel hair pasta
  5. Garlic
  6. salt & pepper
  7. butter
  8. olive oil
  • Bring 3-4 cups of water and a teaspoon of olive oil to a boil and then add angel hair pasta. stir frequently.   It shouldn't take that long to cook angel hair..boil until pasta is nice soft.
  • In a small fry pan, sautee your shrimp in butter, and a dash of virgin olive oil.  season your shrimp with plenty of garlic, we love garlic at my house.  a pinch of salt and pepper to your liking.
  • Once they start to turn pink in color add your fresh baby spinach and toss.
  • While that is sauteeing, cut up your plum tomatoes in halves and add to the pan last. and toss
WHAHHH LAHHHH you're done!!  if you like you can drain your pasta and season  with butter and garlic and add it to your sauteed shrimp, spinach an tomatoes and toss or you can pour it over your pasta.....

So Easy Right???    BON APPETIT!!!  Jackie ;)
